Pull-through sharpeners drag both sides of the blade across carbide bits or ceramic rods simultaneously — removing metal quickly but inconsistently, and almost always at the wrong angle for your specific knife. The result is a blade that feels sharper for a week, then worse than before.
Japanese whetstone sharpening works differently. Each pass is intentional. The angle is set to match the knife’s original bevel — not a generic approximation. The progression moves from coarser grits to progressively finer stones that refine and polish the edge until it’s ready.
